I have been searching for a few years for a source of fresh clam meat. Basically shucked Clams. Well to my delight my fishmonger that visits my community had some the other day so here is my fried clams recipe.

Nova Scotia Fried Clams

We will need a deep fryer or 2โ of oil heated to 350F.
1 lb of clam meat
1 cup of milk
1 egg
1 cup of Fish Crisp Coating
Rinse clams and drain.
While draining, combine milk and egg.
Add clams, and in batches then add to Coating.
Place coated clams on paper towel ready for frying.
To deep fry clams, do in small batches to maintain temp of 350F in oil.
Fry clams for 1 minute or less, until they are golden brown in colur.
Remove from fryer and place on paper towel to drain.
Season each batch removed from fryer with salt.
Wait for temp to reach 350F before adding 2nd batch.
Repeat until all clams are cooked.
Serve on plate with a wedge of lemon and enjoy!
