For this recipe, I gave you some tips:
You donโt need to add a lot of salt as there is already a lot of salt in Pancetta
The key is your eggs should be whipped to a nice consistency, instead of dark yellow they should be light yellow Eggs should be at room temperature You donโt want clumps of yolk, or clumps of white you want everything the same consistency
Your pan-when cooking the egg- should be medium-high- you want it to cook almost the moment it touches the pan and then you can tornado it
When โtornado-ingโ your egg you want to do it slowly so that when the eggs run down they can still cook on the edges
To get the perfect rice shape that your tornado egg sits on put the rice in a small bowl and then place the bowl upside down on a plate, remove the bowl and voila! The perfect rice hill.
You will need chopsticks to create the tornado!
Letโs get cooking! We are going to need to put our tornado egg over something. We are going to do a rice dish. First we are going to pop our rice into a rice cook. And fry up some pancetta, garlic, and onions.
Firstly chop your onion, garlic and pancetta. When your pan is nice and hot add some grape-seed oil. You want to see some caramelization on the garlic and onions. At this point youโll take your rice from the rice cooker and throw it into the pan, mix it all together and break it up. Add a dash of soy sauce for flavour and some colour. When youโve made your rice hill you can get to cooking your eggs.
Donโt waste your eggs! You donโt have to worry about straining them or adding milk. You just want to make sure that the eggs are whipped to a nice consistency, so that they are a light yellow. So take three eggs (1 serving) and whisk your eggs. Once itโs an even consistency with no clumps you will get your pan ready. Make sure itโs medium high heat, not blistering hot! You want it to almost cook immediately after touching the pan.
Now this is where you will use chopsticks. This part goes fairly fast. You want the edges to be cooked all the way around. Then take your chopsticks and you are going to take them from the outside and bring them to the centre still keeping them a little bit apart.
You are then going to take the chopsticks into one hand, and use your other hand to slowly turn the pan in a circle, all while holding the chopsticks in place. There your egg tornado should be done! Youโll then bring it over the plate and slowly slide it out of the pan and on top of the rice. Dress it with some Thai Chili sauce and there you have it! I really hope you do enjoy!
